Raise Your Glass – The Downtown Cocktail Experience

With the kitschy pop of laser light shows, kiosks selling tacky Sin City souvenirs and a zip line that hurtles whooping tourists down the Fremont Street Experience, downtown Las Vegas seems to cater to a hip crowd looking for a “Vegas, baby!” good time. That’s all well and good for out-of-towners, but what about we locals who are seeking a different sort of downtown nightlife? Well, we’re in luck because the Fremont East district offers a host of bars and cocktail rooms that are big on style and run the gamut from low key to lively for a super fun night on the town.

The Perfect Aperitif

Before we begin our cocktail journey, let’s grab a bite to eat… but let’s chow down somewhere we can also find an exquisite beverage to kick things off. The Barrymore (99 Convention Center Dr.) may not be downtown, but it’s close by in the Convention Center district, still convenient enough for a pre-Fremont visit – and if you’re going to pre-game, you may as well do it with style. You can practically picture Ol’ Blue Eyes himself kicking back with a Manhattan in one of the comfy leather chairs or Angie Dickinson primping in front of the elegant mirrors.

The menu of classic American fare is constantly changing and evolving, but you can always find great steaks, chops and seafood to fit any particular taste. Still, let’s face it: this outing is all about the cocktail, so sip a martini (the Blue Corpse Reviver #2 has a nice citrus flair with a dose of absinthe), enjoy a Barrymore on the rocks with Gentleman Jack, or if Scotch is your thing, there’s a smooth Macallan 18 year that’s calling your name. Go East, Young Man

With our bellies full of food (and a smooth beverage or two to go with it), it’s time to head downtown and start up our cocktail room walking tour. We’re heading for Fremont East, so the big red garage at 4th and Carson is a good place to park: easy to get in and out of, close to the action, and there’s a convenient pay kiosk (cash or credit) that you can hit up as you leave.

Once you hit Fremont, head east across Las Vegas Boulevard, and you’ll see the Downtown Cocktail Room (111 S. Las Vegas Blvd.) just south of Fremont. The bohemian vibe here is super mellow this early in the night, making it a great place to unwind after work or bring a date for a quiet, romantic evening, and the drinks are just as sexy as the atmosphere, many infused with seasonal ingredients. The Apple Pie tastes exactly like it sounds; the Clever Genever has a dash of egg white for a unique spin; the S’mores Better and Root Beer Float add a touch of sweetness to their respective tequila and spiced rum. Now that you’ve enjoyed a quiet diversion, let’s liven things up a bit. Head across Fremont to the Vanguard Lounge (516 Fremont St.), a post-modern joint that comes alive with high energy electronic music and the only street-side patio in the Fremont East District – a perfect place for people watching. Classic cocktails take on a modern twist here with selections like The Elderfashioned, a new spin on the classic Old Fashioned with Bulleit Bourbon, St. Germain liqueur and Angostura bitters. Not So Common

Keep the energetic vibe going as you cross back over Fremont at 6th Street and visit Commonwealth (525 E. Fremont St.), a bustling nouveau pub right out of the 19th century with dark wood, candlelight and exposed brick; old school Boston meets new world Vegas. Cocktails hail from both the modern and Prohibition era, served in everything from punch bowls to glasses made from recycled wine or liquor bottles. The Horny Tailgater is a standout, made with barbecue flavored bitters and garnished with beef jerky, served in a mesquite salt rimmed glass.

Head up to the rooftop bar for scenic views of downtown and an entirely different cocktail menu. While up here, sample a bright and tasty Exotic Feelings, made with vanilla vodka, coconut Nigori sake, fresh mint, lime and ginger beer. Behind the Curtain

Want to know the best part about Commonwealth? Well, that’s kind of hush-hush… But we’re going to let you in on the secret. Located behind a hidden door inside the pub, The Laundry Room (the former site of the El Cortez’s actual laundry service) is the closest thing Las Vegas has to a traditional speakeasy. As such, there are a few rules to follow. Reservations are required, but they are only taken via text message. While you’re wrapping up your pre-cocktail dinner, shoot them a message to secure a spot. Once you arrive, your host will lead you into a separate hall to explain the rules of the house, among them “don’t be creepy” and “no name dropping.”

Only then will you enter the exclusive Prohibition-era domain with its tufted couches and old-timey music. Drinks are categorized by type of alcohol and you can sip everything from classics such as an Old Fashioned or French 75 to handcrafted, trendier beverages. The Bee’s Knee is a delight for gin lovers, accented with lemon and honey, while whiskey fans will dig the sweet Ward 8 with rye whiskey, lemon, orange and grenadine. As we wrap up our night and head back to the garage (or to the taxi stand, if we’re still feeling a bit tipsy), we can take comfort in the fact that we’ve enjoyed a nice dinner, good conversation, some lively atmosphere and a touch of special treatment. While downtown Las Vegas may be constantly reinventing itself, we can only hope that this vibrant cocktail scene is here to stay.

Eating Healthy – The Mediterranean Way

There’s been plenty of buzz about the Mediterranean Diet lately. Based on the food choices of people from the 1960s living on the Greek island of Crete, the rest of Greece and Southern Italy, the plan has been touted by US World News as one of the three best diets for losing weight and maintaining a healthy heart and lifestyle.

It’s not really a diet per se, but more a lifestyle change that deviates from eating fatty meats, processed sugars and other terrible things the typical American might pile on his plate. The Mediterranean way encompasses plenty of oily fishes like sardines, mackerel and salmon; plant based fruits and vegetables including kale, spinach, avocados and tomatoes; and a healthy dose of nuts and olive oil for optimum fat intake. Pasta, grains, beans and breads are in, with red meat limited to one or two T-bones a month at best. One to two glasses of red wine a night is also A-okay; while not a necessity, it helps make this method of dining both enjoyable and flexible in terms of entertaining and eating out.

The “diet” is beneficial for the diverse health needs of both men and women. Scientifically proven to be good for the heart due to lower saturated fat intake and higher fiber content, the eating plan is rich in potassium and iron, a combination that supports muscle development, lower blood pressure and keeps anemia at bay. A recent study observing more than 1.5 million adults who ate a Mediterranean style diet also reported reduced rates of cancer and cancer mortality, as well as a reduction in the number of cases of Parkinson’s and Alzheimer’s diseases. Good news for a diet that allows for some tasty options!

Get on your way to a living a healthy lifestyle with menu mainstays that include a tasty spinach and olive Greek Lasagna, Lemon Thyme Salmon and Asparagus that’s pretty enough to serve to company, or a delicious grilled veggie Fattoush salad. Finish your meal with baked peaches with citrusy cardamom and honey ricotta filling for a yummy way to fight off disease and excess baggage the Mediterranean way!

Greek Vegetarian Lasagna

Serves 8-10

  • 1 lb. whole wheat lasagna noodles
  • 2 Tbsp. extra virgin olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 – 10 oz. packages frozen chopped spinach, thawed, excess liquid squeezed out
  • 2 medium zucchini, sliced
  • 1 tomato, chopped
  • 1 tsp. ground oregano
  • 1 – 16 oz. jar marinara sauce
  • 1/2 cup kalamata olives, sliced
  • 1 cup part-skim ricotta cheese
  • 2/3 cup crumbled feta cheese
  • 1 egg, beaten
  • Freshly ground black pepper

 

Preheat oven to 350 degrees. Cook lasagna noodles until still a little chewy in the middle (more firm than al dente). Set aside to drain. Meanwhile, in a large skillet, heat olive oil over medium heat and add onion. Sauté three minutes. Add garlic and oregano, sautéing for two minutes more. Add the zucchini and sauté until beginning to soften, another two minutes. Add the spinach, chopped tomato and all but ½ cup of the bottled marinara sauce, reserving the plain tomato sauce for the topping. Cook one minute. Turn off heat, cover, and set aside.

In a medium bowl, mix the egg, ricotta, and feta cheese and a generous amount of black pepper. In a 13 x 9 inch baking pan, spoon a little of the spinach/sauce mixture into the bottom of the pan. Place a layer of the cooked lasagna noodles across this sauce. Ladle a generous helping of the spinach/sauce over this and spread 1/2 of the feta-ricotta mixture over the sauce. Sprinkle 1/4 cup of the kalamata olives over this. Repeat layering, finishing with ½ cup reserved marinara sauce and cheese. Sprinkle with oregano and pepper if desired.

Cover pan with aluminum foil and bake at 350 degrees for 20 minutes. Remove foil and cook uncovered for another 15 – 20 minutes until lasagna is bubbling and cheese is browned on top. Allow lasagna to rest for 20 minutes or so before serving.

Lemon Thyme Salmon with Shaved Asparagus Salad

Serves 4

  • 2 1/2 Tbsp. extra virgin olive oil, divided
  • 4 – 6 to 8 oz. boneless salmon fillets, skin on
  • 1 Tbsp. chopped fresh thyme
  • Juice and zest of 1 lemon
  • ¼ cup finely chopped walnuts, toasted
  • 1 pound fresh asparagu
  • Sea salt and freshly ground pepper to taste
  • 1 Tbsp. grated Parmesan
  • 4 lemon wedges

Preheat oven to 275 degrees. Line a rimmed baking sheet with aluminum foil. Brush with ½ Tbsp. oil. Place salmon fillets, skin side down, on prepared baking sheet. Mix 1 Tbsp. olive oil, thyme, and lemon zest in a small bowl. Spread thyme mixture over salmon fillets. Season with salt and pepper. Let stand 10 minutes to allow flavors to meld. Bake salmon until just opaque in center, 15 – 18 minutes.

Meanwhile, wash and snap the asparagus spears at their base. Upend a small bowl, place a spear on the flat bottom, and using a vegetable peeler, gently shave into long thin slices. Mix the lemon juice with remaining 1 Tbsp. olive oil and season with salt and pepper. Just prior to serving, toss the dressing with the walnuts and asparagus. Sprinkle with Parmesan and serve with salmon and lemon wedges.

Grilled Zucchini and Bell Pepper Fattoush

Serves 4- 6

  • 3 medium orange or red bell peppers, stemmed, seeded, quartered
  • 4 to 5 slender zucchini, cut lengthwise in half
  • 2 – 6-inch pita breads, each cut horizontally in half
  • 1/2 cup olive oil, plus more for grilling
  • 1 – 8 oz. peeled cucumber, seeded and cut into 1/2-inch cubes
  • 12 cherry tomatoes, halved
  • 3 green onions, thinly sliced
  • 1 cup (scant) pitted kalamata olives, halved
  • 1/2 cup fresh mint leaves
  • 1/3 cup chopped fresh cilantro
  • 1/4 cup fresh lemon juice
  • 1 tsp. ground cumin
  • 4 oz. feta cheese, cut into 1/2-inch cubes (optional)
  • Ground sumac (optional)

Brush peppers, zucchini, and bread on both sides with oil. Sprinkle lightly with salt and pepper. Grill over medium heat until slightly charred and vegetables are just tender. Cool. Tear bread into 1-inch pieces.

Cut bell peppers and zucchini into 1/2-inch pieces. Place in large bowl. Add cucumber, tomatoes, green onions, olives, mint, and cilantro and toss to combine. Add bread pieces. Whisk 1/2 cup oil, lemon juice, and cumin in small bowl to blend. Season to taste with salt and pepper. Add dressing to salad; toss to coat. Add feta and gently mix into salad. Sprinkle with sumac if desired.

Baked Honey Almond Peaches

Serves 4-8

  • 4 peaches, pitted and halved
  • 2 Tbsp. honey
  • 1/2 cup ricotta cheese
  • 1/4 tsp. cardamom
  • 1/4 cup almonds
  • Mint for garnish (optional)

Preheat oven to 400 degrees. With a small spoon, scoop out a portion of the peach center to create a small indentation. Arrange peach halves face up on parchment lined baking sheet. In a small bowl, combine ricotta, honey and cardamom. Spoon the honey/ricotta mixture into center of prepared peaches, dividing equally. Bake for approximately 15 minutes or until peaches are soft. Remove from oven.

Meanwhile, grind almonds in a food processor until coarsely ground. Gently toast in a skillet over medium heat until golden. Sprinkle almonds over baked peaches, serving with chopped mint if desired.

Plastic No More – Committing to Re-Usable Bags

In our retail driven culture, we often don’t give much thought to the plastic bags we use to carry home our purchases. But as we lean toward becoming environmentally conscious, moving away from plastic bags has become more important. Still, many of us are quick to make our own excuses as to why we don’t switch over to something more green. What many people fail to realize is that breaking free of those excuses and making the change is easier than you think.

Excuse #1: “What About Contamination?”

Fears over contamination have kept many consumers from adopting re-usable bags. Researchers at the University of Pennsylvania and George Mason University noted a rise in food borne illness following a plastic bag ban in San Francisco, which had many shoppers clinging to plastic for dear life. While the presence of bacteria is always a concern, these fears may be a bit misguided. If you already have reusable shopping totes, such as the ones you pick up at the grocery store, you can protect them from bacteria by not using them for raw meats and produce, and also by cleaning them with a damp cloth soaked in half distilled white vinegar and half hot water.

Washable cloth bags are a simple way to stay green. By washing your bags after each trip to the store, you help lessen the risk of food borne illness. Envirosax® (www.envirosax.com) manufactures

Excuse #2: “I’m Too Forgetful!”

Habits can be hard to break, and remembering to use plastic bags is no exception, but when you make a concerted effort to carry your own, it should eventually become second nature. Also, with foldable bags, it’s not difficult at all to carry them with you. Keep a selection of bags in your car for impromptu trips to the store. That way, you will never find yourself in need of a plastic bag when you approach the register. “No bag, please, I have my own,” will become your new mantra. Some stores such as Target will even reward you for it with a discount on your bill.

And don’t forget to recycle those plastic bags sitting around at home. According to the Environmental Protection Agency, less than ten percent of plastic bags are recycled, with other estimates at less than one percent. Still, nearly every grocery store has a bin for collecting plastic bags. Use it! Gather up all the bags filling up space in your pantry and drop them off the next time you go shopping. Encourage your friends, co-workers and family members to do the same.

 

Excuse #3: “Plastic Makes My Home Life Easier!”

You can fight the green fight on the home front as well. Many people use plastic grocery bags to line their wastebaskets; however, there are many non-plastic ways to keep your trash bins clean. Round coffee filters fit nicely into the bottom of bathroom wastebaskets and can be replaced as needed. Additionally, wastebaskets can be wiped out weekly with the same white vinegar and hot water solution recommended for cleaning your re-usable bags. Ditching the plastic bin liners may seem like an inconvenience at first, but it’s one more small step toward living a greener life.

For packing lunches, reusable snack and sandwich bags can take the place of plastic and can be found at www.reusies.com. Children love the fun fabrics and they can be hand washed or tossed in the washing machine or dishwasher. Storing food in your refrigerator and freezer in BPA-free plastic or glass containers can also prevent piling up plastic in the landfills. Of course, if there is a reason you simply must use a plastic bag, opt for a biodegradable and/or compostable option.

As people become more aware of the need to conserve, it’s good to know that alternatives exist to the traditional plastic bag. These options will not only help you green up your life but will also keep needless waste to a minimum and keep the planet spinning toward a better future for all.

Getting the Most From Your Doctors’ Visits – A Survivor’s Guide

As we assemble our team for the upcoming Relay for Life and Race for the Cure, I find myself thinking about the infinite number of individuals who have battled cancer, my own family among them. In November 2008, my wife Hali was diagnosed with breast cancer. After many visits to numerous doctors, a double mastectomy followed by immediate reconstruction, six months of chemotherapy and a hysterectomy, Hali now counts herself as a survivor.  Being prepared for every appointment and being actively involved in her medical care was a huge part of Hali’s success in beating cancer. Whether dealing with a major disease or just struggling with headaches, the following steps will help you be better prepared for medical appointments.

1. Investigate the doctor. Even before you make the appointment, visit websites such as www.vitals.com and www.healthgrades.com to learn the doctor’s credentials, educational background, areas of expertise, insurance accepted, malpractice and medical board complaint history. You can also get a look at patient reviews.

2. Schedule the office visit. Always take the first available appointment and ask to be wait-listed for any appointments that become available later. If the doctor’s office does not have a wait-list system, call daily to see if there are any cancellations. Also, if you are using insurance, make sure to verify that this doctor is a provider.

3. Obtain the new patient forms beforehand. Ask the office to send the forms required of new patients to you or download them from the doctor’s website. This way, you don’t have the pressure for immediate recall of information, and you can refer to your records if need be.

4. Prepare a health timeline. Writing down your symptoms will allow you to explain what has been occurring without having to recall dates and times. Other pertinent information to bring includes: remedies you have already tried to alleviate symptoms, a list of medications/dosages, dates of  surgeries/medical procedures, and family history of major illnesses.

5. Prepare a comprehensive list of questions. Write down your questions as you think of them, no matter how insignificant they may seem. Before the appointment, be sure to review, organize, and rewrite your questions, leaving enough room to jot down answers during the appointment.   

6. Gather relevant medical records. Be sure to collect all your medical records (such as blood test results, x-rays, CT scans, MRIs, mammograms, doctors’ notes, etc.) prior to your appointment. Do not depend on any provider to send them, and always keep a copy for yourself.

7. Bring someone with you to the appointment. A great deal of information is often communicated during a doctor’s visit. Bringing a family member or friend along can be emotionally supportive and provide another perspective when processing the information later and when comparing doctors if you are going to see more than one.

8. Audiotape the doctor’s appointment. Tape recording the visit allows you the opportunity to review the details at a later date rather than recall them from memory. Always ask for permission beforehand.

9. Trust your instincts. During your appointment, you will be assessing whether you want this doctor to handle your medical issue. Is (s)he patient, reassuring and a good communicator? Does (s)he make you feel comfortable and instill confidence? Does (s)he answer all your questions thoroughly and make an effort to explain things clearly? If the doctor is not meeting your needs, find another.

10. Get a second, third, or even fourth opinion. Many insurance companies pay for a second opinion, so make sure you get one. Depending on the severity of the condition, you may even consider getting a third or fourth opinion. Before Hali made her final choice, we actually “interviewed” five different breast surgeons! The best doctor and treatment option for one person may not be the best for another. You must decide if the doctor is a good match for you.

Gone are the days when you could (or should) leave your medical care in someone else’s hands. You must take control and be an active participant in attaining the best care for your needs by conducting lots of research and asking lots of questions. With all the current technology literally at your fingertips, there is no excuse for not being prepared when visiting your doctor. The combination of a highly qualified physician and your active involvement in your medical care may make the difference in whether or not you become a survivor.

Whether your kids are seeking an exciting new experience or you’re looking to give them something to fill the hours, there are a host of great camps in and around the Las Vegas valley offering a wide range of super summer fun.

Academic Camps

Summertime isn’t all fun and games; some students need extra help for the school year ahead. Tutoring Club is here to help build the foundation needed for academic success with a series of 32-hour camps and 25-hour workshops between June 10th and August 22nd. The camps will cover subjects including reading, writing and math, while the workshops will help older students prep for the SAT and ACT. Picture Perfect – 50 Greatest Photographs of National Geographic

If a picture is worth a thousand words, then the photographs published by National Geographic magazine over its 125-year history are worth volumes. From stark reflections of nature’s power to candid shots of wildlife in their natural habitat to portraits of simple humanity, these are photos that have become an indelible part of the world’s public consciousness. Now you can view some of these celebrated and iconic images for yourself at the 50 Greatest Photographs of National Geographic exhibit, housed at the Imagine Exhibitions Gallery at The Venetian.

Photo Finish

While you may recognize many of the famous photos on display, you’ve never seen them quite like this. Each image has been significantly enlarged to provide a close look at every detail. Vivid colors leap out of the frame. You can practically feel the grit of the Afghan desert, the bite of the arctic wastes or the roar of a Lockheed jet engine. Each stunning work of art is accompanied by a brief “story behind the picture,” offering personal recollections from the photographer along with important social and historical context. A map also shows where each photo was taken, illustrating the global scope of the artists’ work, while documentary videos throughout the exhibition give even more insight into the snapshots. Some displays even feature “near frames” taken by the photographer: the sequence of images that led to the perfect photo.

Natural Selection

The incredible range of work on display highlights the wide array of subject matter that National Geographic has covered over the years, most notably the wonders of the natural world. You would be hard pressed to find a more intimate look at the animal kingdom. A half-blurred shot catches a wild elephant in mid-charge, its eyes turned an ominous red by the photographer’s flash. A herd of camels crosses the Kuwaiti desert, black silhouettes in the shadow of raging oil fires from the first Gulf War. A lion stares right into the lens with glassy eyes, his jaws locked around a rival’s throat in a fight to the death. The awesome power of nature comes alive as well, with enthralling shots of a tornado on a South Dakota highway, the sun-baked salt flats of Lake Assal in Djibouti, and a towering vertical photograph of a California redwood so massive that it had to be composited from over eighty separate shots taken from a customized camera rig.

Being Human

Aside from its evocative imagery of the world around us, the exhibit showcases a moving portrayal of humanity at its most personal and socially conscious. Faithful Muslims gather around the Kaaba at the Al-Haram Mosque in Mecca. French teenagers laugh and enjoy life while riding a riverboat down the Seine. Two young girls swim in the Dead Sea on the West Bank, the violence and politics of the region forgotten in a moment of stillness. From the sadness of a young Peruvian child to a lonely cowboy in an Elko, Nevada bar to Jane Goodall interacting with her beloved chimpanzees, these photos capture the intimacy of the human condition.

But of all the stories captured by National Geographic, none is more stirring and unforgettable than Steve McCurry’s renowned photo of the “Afghan Girl,” which is given special prominence in the exhibit. Taken at a refugee camp in 1984 during the Soviet occupation of Afghanistan, the photo portrays a young girl staring into the camera with piercing green eyes. Etched on her face, we can see the horrors of poverty and war, forever frozen in time with unforgettable austerity.

The best photographs have the power to captivate us with a single image and leave an emotional impact that we will always carry with us. Some may delight you and some may haunt you; either way, the 50 Greatest Photos of National Geographic will certainly make a lasting impression.
