Eggs in a Basket with Maple Prosciutto 
6 servings

  • 1 bag Simply Potatoes fresh hashbrown potatoes
  • 1/2 stick unsalted butter, melted
  • Kosher salt and freshly cracked black pepper
  • 6 slices prosciutto, about 2 1/2 oz., chopped
  • 2 Tbsp. maple syrup
  • 6 eggs
  • 3/4 cup shredded provolone

-Preheat oven to 350 degrees F. Spread hashbrowns in a thin layer on paper towels and dry thoroughly. Add the potatoes to a large bowl, stir in the melted butter and season well with salt and pepper to taste. 

-Spray a 6­cup, jumbo sized muffin tin lightly with nonstick cooking spray. Press the grated potatoes evenly into the cups being sure the potatoes go up the sides and cover the bottom in a thin layer. Bake until the top edges turn light golden brown and the potatoes are cooked through, about 35 to 40 minutes. Meanwhile, in a small bowl, toss together the prosciutto with maple syrup and a few grinds of freshly ground black pepper. Set aside. 

-Remove the potatoes from the oven and gently crack an egg into each cup. Bake until the egg whites set but the yolk remains runny, about 6 to 8 minutes. Remove from the oven and set the oven to broil. Top the eggs with grated cheese and put the maple prosciutto on another sheet tray. Broil both until cheese melts, and meat crisps slightly, about 1 minute. Top the eggs with crispy prosciutto and serve immediately.

AIsraeli Poached Eggs in Spicy Tomato Sauce 
Serves 4

  • 1/4 cup olive oil
  • 4 Anaheim chiles, stemmed, seeded and finely chopped
  • 1 small yellow onion, chopped
  • 5 cloves garlic, crushed then sliced
  • 1 tsp. ground cumin
  • 1 Tbsp. paprika
  • 1 (28 oz) can whole peeled tomatoes, undrained
  • Kosher salt to taste
  • 6 eggs
  • 1/2 cup feta cheese, crumbled
  • 1 Tbsp. chopped flat-leaf parsley
  • Warm pitas or crusty bread, for serving

-Heat oil in large skillet over medium­high heat. Add chiles and onions and cook, stirring occasionally, until soft and golden brown, about 6 minutes. Add garlic, cumin and paprika and cook, stirring frequently, until garlic is soft, about 2 more minutes.

-Put tomatoes and their liquid into a medium bowl and crush with your hands. Add to skillet along with 1/2 cup water, reduce heat to medium and simmer, stirring occasionally, until thickened slightly, about 15 minutes. Season sauce with salt.

-Crack eggs over sauce so that eggs are evenly distributed across sauce’s surface. Cover skillet and cook until yolks are just set, about 5 minutes. Using a spoon, baste the whites of the eggs with tomato mixture, being careful not to disturb the yolk. Sprinkle with feta and parsley and serve with bread for dipping.

Fork and Knife Mediterranean Egg Salad Sandwich
Serves 2-­4

  • 8 hardboiled eggs
  • 1/2 cup mayonnaise
  • 1 tsp. yellow mustard
  • 1/4 cup thinly chopped green onion
  • 1/4 tsp. smoky paprika
  • Salt and pepper to taste
  • 1-2 Tbsp. olive oil
  • Garlic salt
  • Trader Joe’s Red Pepper/Eggplant Garlic Spread
  • Leaf lettuce
  • Ciabatta bread

-Combine eggs, mayo, mustard, onion and paprika. Season with salt and pepper to taste and refrigerate for at least one hour.

-Slice bread into thick slices. Brush with olive oil, sprinkle with small amount of garlic salt and grill until warm through. Cool bread slightly and then coat with a generous amount of red pepper/eggplant spread. -Top pepper mixture with a few slices of leaf lettuce. Scoop egg salad mixture over the lettuce. Garnish with additional paprika if desired

Chocolate Raspberry Chia Seed Pudding 
Serves 4

  • 1/4 cup cacao powder or unsweetened cocoa powder
  • 3-5 Tbsp. maple syrup
  • 1/2 tsp. ground cinnamon
  • 1 pinch sea salt
  • 1/2 tsp. vanilla extract
  • 1 1/2 cups almond or coconut milk
  • 1/2 cup chia seeds
  • Raspberries, sliced almonds and unsweetened coconut

-In a small mixing bowl combine cacao powder, maple syrup, ground cinnamon, salt and vanilla. Add a small amount of the almond milk and whisk until a paste forms. Add remaining almond milk and whisk until smooth. Add chia seeds and whisk once more to combine. Layer pudding and raspberries, almonds and coconut in small jars with lids. Cover and refrigerate overnight, or until it’s achieved a pudding­like consistency. Garnish with additional fruit and nuts.

Wild Salmon with Berry Noir Sauce 
Serves 4

  • 4 (6oz.) wild salmon filets, skin on
  • 2 lemons, juiced
  • 4 Tbsp. butter, divided
  • Kosher salt
  • Fresh ground black pepper
  • 1 cup blueberries
  • 1 cup blackberries
  • 1 cup Pinot Noir wine
  • 1/3 cup good quality balsamic vinegar
  • 2 fresh sage leaves

-Bring the wine and balsamic vinegar to a boil in a small saucepan. Add the sage. Reduce heat and simmer until sauce has reduced by half. Add half of the berries. Muddle the berries to release juices. Add the remaining berries, keeping them whole, and stir in the butter. Season with salt to taste and let simmer for 10 minutes. Keep warm.

-Season the salmon with lemon juice, salt and pepper. Heat 2 Tbsp. butter in a shallow pan over medium­high heat until melted and just sizzling. Add the salmon filets skin side up and cook three to four minutes. Flip the salmon and cook two to three more minutes, or until the fish is firm and opaque. Remove skin and serve with sauce.

Blueberry Flatbread with Honeyed Goat Cheese and Prosciutto 
Serves 2-­3

  • 4 oz. goat cheese, softened
  • 2 Tbsp. honey
  • 3 small pieces of naan bread
  • 1/2 pint fresh blueberries
  • 4 to 5 slices thinly shaved prosciutto
  • 3 tsp. fresh thyme leaves
  • Freshly ground black pepper, optional

-Preheat oven to 425°F. In a bowl, combine goat cheese and honey until well blended. Place the naan on a baking sheet. With the back end of a spoon or a knife, spread the goat cheese evenly on the naan slices. On top of the goat cheese, add a handful of blueberries. Place in the oven and bake for 15 minutes until the naan is toasted and the blueberries softened.

-Remove from the oven and add prosciutto and 1 tsp. of thyme to each flatbread. Sprinkle with a pinch of black pepper, if desired. Slice and serve.

Grilled Ham and Cheese with Strawberry Habanero Jam 
Serves 4

  • 1/2 cup good quality strawberry preserves
  • Zest of half an orange
  • 2 habanero chilies, seeded and minced
  • 8 slices crusty bread
  • 8 slices gruyere cheese (double for extra cheesy)
  • 3/4 pounds thinly sliced black forest ham
  • Softened butter

-In a small saucepan, combine preserves, habanero chilies and orange zest. Bring to a simmer and cook for 5­10 minutes. Let cool.

-Assemble by spreading strawberry habanero jam on one side of each slice of bread. Layer cheese and equal portions of ham over top of the spread and put the sandwich together. Butter the outside of the sandwich and place in a cold skillet. Turn the heat to medium and grill, turning once, until cheese is melted, ham is heated through and bread is golden brown. Serve with additional strawberry spread if desired.

Getting a manicure has certainly changed over the years.  Our nails have become a canvas for a variety of styles and trends. Still, not every salon is the same when it comes to providing polishes and products that are durable while keeping us safe.  Knowing what to look for and the questions to ask at your next visit can make all the difference. Tsu and Nataliia, owners of Prestige Nail Boutique have done extensive research on various nail related products and offer these tips for helping you to make an informed decision on what’s right for you and your nails.

All Polishes are Not Created Equal

You might think all polishes are created equal but in reality, some of the best products to use on your nails aren’t called polish at all. When choosing colors at your next manicure, ask your nail technician what products and brands they offer. Look at the bottle to be sure you’re getting what you pay for and be wary of bottles without labels. Choose the product that’s best for your lifestyle, budget and the health of your nails.

 Polish

Many salons use a simple polish to paint your nails. Nail polish is quite thin, its primary use is for decorating and drawing and it will chip off easily.  Most budget nail salons use these polishes to paint nails, as their life expectancy is as little as 2 days, making it easier to upsell Gel Polish that lasts longer.

Nail Lacquers

Nail lacquers are a step above regular polish and provide superior wear.  Known for their thickness, lacquers are more durable and chip resistant than polish.  They offer some protection to the nail and last about 5 to 7 days.  At Prestige Nail Boutique, we also apply a middle coat vs. the tradition base and top coat, extending the life of the product.

Gel Polish (aka soft Gel Polish)

Gel polish (the kind that requires a lamp to cure) is by far the most durable choice of polishes. It’s the thickest and most chip resistant of the three.  It requires no drying time as the product cures under a UV/LED lamp.   The product lasts 10 to 14 days, and removal  should be done by a professional to prevent damage to the nail bed.  At Prestige Nail Boutique we use LED lamps, cutting the UV exposure from 2 minutes to 30 seconds.

The Difference Between Acrylic, Hard Gel, PolyGel and Dipping Powder

For those that enhance their nails, there’s a variety of choices. It’s important to note that none of these products should damage the nail. An experienced nail technician should know how to properly apply and remove these products, so if you’re experiencing damage to the nail it’s most likely from over filing and improper removal of product by your nail tech.

Acrylic

Acrylic is powder and liquid Monomer mixed together, applied over the nail and/or tip. This product is a good choice for the budget conscious consumer that don’t mind a thicker, heavy looking nail that’s prone to staining.  Since the surface is porous, we recommend paring it with Gel Polish to minimize staining.

Be aware of suspiciously cheap acrylics and salons that smell. This could mean they’re using products that contain MMA.  MMA has been banned from Nevada, yet is still secretly used by many salons. It doesn’t bond to the nail well, and requires excessive filing that severely damages the natural nail, especially if the tip is knocked off. At Prestige Nail Boutique, our Acrylic is odorless and never contains MMA. It also allows the nail to safely pop off should it be hit hard.  

Hard Gel & PolyGel

Hard Gels come in gel form, usually in a jar, never as a powder or liquid.  Most often people get confused between Hard Gel and Acrylics.  Hard Gels are non-porous, they cure only under the lamp and are lighter and stronger than acrylic.  They usually feel thinner and look more natural.

PolyGel is the newest and most technologically advanced of the three. It is a hybrid of Acrylic and a Hard Gel. It is more flexible than Acrylic, stronger than Hard Gel, and lighter than both. PolyGel and Hard Gel both cure under the lamp. 

Dipping Powder

Perhaps the most natural looking product of the four, dipping powders are formulated to improve the health of the nail while providing a finish that’s flexible, lightweight and strong. Its odorless, doesn’t stain and requires no UV light. 

 A base coat is applied to the nail and then it’s dipped or poured into a colored powder and sealed with a special top coat. We use SNS powders made in the USA and feature over 400 colors to choose from.  Our dips nourish the natural nail with Vitamin E & Calcium.

When considering any of these products, it’s important to steer clear of the harsh chemicals found in cheaper brands used at most discount salons. These usually contain toxic ingredients known as the “Big 5” that are suspected of causing health issues from cancer and dermatitis to reproductive and neurological disorders.  Unlike most salons, Prestige Nail Boutique only uses Cruelty Free, Vegan, Big 5-Free, Organic products.  For added protection, we also use one-time disposable nail files, buffers, cuticle sticks, manicure bowls, pedicure liners, toe separators and slippers.  Our metal tools are sanitized, disinfected and sterilized with equipment that’s made in the USA and is FDA registered.  We do it because we care about your health

I started collecting coins when I was five. I’m sixty now.  As an adult I have helped to start what is now four other shops here in town. I am also a certified PCGS and NGC dealer qualified to do appraisals for Probate Court, Trusts, and the IRS.  Not getting any younger, I was trying to decide what to do for the remaining years I have left. So I decided to roll the dice and open a brick and mortar store to follow my passion. That brick and mortar store is Las Vegas Coin Company. Our goal is to provide extraordinary service in a no-pressure environment. We spend time educating our customers so they can make an informed decision as to whether they wish to sell their items, be it coins, collectibles, or jewelry. And of course, we also sell all of the above. Our customers have been pleasantly surprised to find us selling gold and silver bullion, collectibles, and now jewelry, at prices competitive with the internet.

Besides buying coins and jewelry, what other items do you specialize in?

We deal in a variety of merchandise that includes a substantial interest in collectibles. Within our store lies LV Collectibles, owned by Scott DeLorge. Scott managed Antiquities International in the Forum Shops and has 20 years experience in the internet sale of these items. From autographed items like the signed photo of the LA Lakers holding Jack Nicholson, to art, collections of figurines which include Lladro’s and Hummels, and sports memorabilia, we want to take a look at all of it. Nothing is too obscure for us to evaluate. We also never charge for verbal appraisals on the items you bring in. Additionally, we  have a Gemological Institute of America (GIA) graduate on staff with years of experience to help identify your rare gemstones, watches, and other valuables.

I’m sure you’ve had some interesting things come through the doors. Any favorites?

Las Vegas Coin Company has a reputation for buying almost anything. We acquired a 52 pound meteor that we named Fulton, purchased a Grammy Award Nominee Medal from the band Slipknot, and a chair that was made in the late 1400’s. Before Columbus came to the new world, that chair was sitting in a church in Flanders. Sure, the majority of what we see is coins, jewelry, diamonds, and collectibles. Henderson Hospital Strong: Award Winning Care With Plans for Expansion

Henderson Hospital has been on a quality and growth trajectory since its doors opened in October 2016. The facility is on task to meet healthcare concerns voiced by residents in “Henderson Strong,” a citywide planning document adopted in 2017 that addresses economic and population growth. Sam Kaufman, CEO and Managing Director of Henderson Hospital, discusses the hospital’s recent milestones and future plans.

Q: Why is there a need to expand health services?

A:  The city of Henderson continues to expand. It’s up to about 350,000 residents. Our hospital lies in the southeast. There is a lot of growth in this part of town with various master-planed communities expected in the next three to five years. With the closing of the St. Rose de Lima acute care facility, it’s even more important that our residents have access to care.

Q: To what do you attribute Henderson Hospital’s success?

A: Our outcomes are phenomenal based on national surveys for quality, patient experience and patient safety. We’ve got the grade A from Leapfrog [fall 2018] and we received the Top Hospital award. In this age of transparency, people have the opportunity to see where the best hospitals are and they want to go to the best.  We also have a very close relationship with the physician community because of our quality, patient experience and patient safety. They want to send their patients to us.

Q: How is the hospital meeting emergency care demands?

A: The ER at Green Valley Ranch opened on November 12. It is located about 10 miles away from Henderson Hospital. About a half-mile away is another full-service hospital that is inundated with volume. We knew if we built an ER we’d give the residents of Henderson an alternative to long wait times. We’re averaging 45 visits a day. By the end of the year, an additional ER will open, so The Valley Health System will have two freestanding ERs.

Q: Does Henderson’s population growth include newborns?

A: Since we opened our Level II NICU in July 2018, we went from 40 to 50 births a month to an average of 150 births a month now. We’re looking at expanding our NICU to 12 beds by the end of the year.

Q: Does your expansion include cardiac services?

A: We’re building a second cardiac catheterization lab. Right now we have a combined cath lab/specials lab. We’re building a new specials lab that will give us a cath lab and a radiology specials interventional lab, so we’ll have one of each after July 1.

Q: You mentioned that an acute care facility closed in Henderson. Are other services needed?

A: There used to be a wound care center associated with the Lima hospital, but it moved, so this area was left with no wound care access. Our new Wound Care and Hyperbaric Center meets the needs of the population over 65, as well as younger patients who also have wound care needs.

Q: Are there plans to add more beds?

A: We opened 28 new medical-surgical beds last year, and they’re all filled. We’re approved to open a 28-bed observation unit adjacent to the ER, which will be done by the middle of next year. We’ve also been given architectural design validation funding to plan for a new four-story, 120-bed patient tower, and are in the process of building out two ORs that will be done by the end of the year.

Q: What’s your outlook for the hospital?

A: The ER at Green Valley Ranch is providing emergency care for our patients, the level II NICU is doing great and so is the wound care center. Overall, the hospital has really taken off. It’s extremely successful and our goal is to continue to meet the demand of the growth coming into this community. So far, we keep hitting home runs.

Don’t Let Your Children Fall Behind: Are you aware of Brain Exercise?

We asked the founders about their program and how it can get our children on the right path for a triumphant future.

What was the inspiration for opening the Sapience?

We, as parents, had two very specific experiences that left us wanting more for our children.

  • Arushi, our founder’s daughter, watched a televised mental math competition on T.V. where the children participating were displaying the ability to solve long equations all in their head as if they were human calculators! Arushi, a student at Palo Verde Highschool, explained to her mother that she felt that the children that participated in such competitions must be born with natural calculation abilities. Arushis mother and Sapeince founder, Puja Chamaria knew that brain exercise was the key for these children as it is commonly practice in academically high functioning societies. Working with world-class mental math professors Puja developed an unmatched brain exercise curriculum which her daughter has now been going participating in for the last five months. The benefits have exceeded expectations as her daughter has realized improvement in all subjects and is even consistently scoring 95%+ in all her subjects.
  • Attempting to enroll my 9-year-old for tutoring was a painful process; most tutoring centers don’t provide help on all subjects, so in order to get him the help he needed, I had to travel throughout the city to multiple centers throughout the day. There was no transparency to my sons progress at centers like Kumon; They have no tools for parents measure if their tutoring program was worth investing our time and money.

What is brain exercise and why is it important?

Brain exercise happens by intensely stimulating the left and right hemisphere of the brain simultaneously. Dr. Crovetti Dedicated to “Getting it Right”​

Perhaps the most important stock in trade for a local business is “trust” … especially when that business is to care for your health. After all, trusting that your doctor will do what’s best for you is a lot more important than how you feel about your car salesman.

It’s a long and dedicated road to gain that patient trust and build a great reputation – one that takes real care and compassionate medical expertise. That’s precisely the road that Dr. Mike Crovetti of Crovetti Orthopaedics has been on for the past 20 years. There were certainly bumps along that road created by the economic crash. But in true Crovetti fashion, he found a unique way to solve those problems – and it was one borne directly from his desire to serve his patients even better.

“When I came to Las Vegas in the late 90’s and settled in Henderson to build my orthopaedic practice, the first few years went well. At least they did – right up until a Friday afternoon in late 2008, when I was told Silver State Bank was taken over by the Feds and we lost ‘just’ about everything.”

The Silver State Bank seizure created a hardship for many in Las Vegas who lost all their money, just as Crovetti did. But it also created another dilemma for him – he also lost the balance of the construction financing for the building Crovetti Ortho is now in, that wasn’t completed at the time. To say the least, this was all a shock at first. But then it became a challenge to Dr. Crovetti to find the right solution. And when he did, he worked even harder to make it happen.

“The first thing I did was to let my staff know that no one was being let go. We’d work our way through this, and there might not be any raises for a couple years, but we were staying together as a team.

The second thing I did to save the building was to lease out the entire thing,” he explains. “But with all the financing gone, I had to make one more effort to get the money to finish it. So, I went to another bank and was able to get what was going to be my last-chance loan.”

It took everything he had to make it happen, and it wasn’t overnight. In fact, it took nearly two years to come up with the idea that would end up not only saving the building and his practice – but also innovated the entire recovery method for his patients. It’s a solution that has now taken hold in cities around the country, and Dr. Crovetti pioneered it here in Nevada: The Coronado Surgical Recovery Suites.

There was still a lot of work to be done,” he reveals. “But we had a plan, and I saw it through. Now, our patients get to enjoy the benefits of our recovery suites, some so much that they tell us they don’t want to leave,” he laughs. “That’s music to our ears here, because nothing matters as much as our patients’ getting ‘back in their game.’”

These days, with the addition of two new doctors at Crovetti Ortho – Dr. Caleb Pinegar and Dr. Tomas Kucera – Crovetti has the chance to take a little more time to enjoy life, and cut down on what used to be an 18-hour workday.

“I’m getting to spend more time with my wife, Karen, doing things we’ve always planned on doing – being with friends and travelling. And even though we’re empty-nesters now – with all three kids attending college and/or medical school in Texas – we spend a lot of our time visiting the Lone Star State to see them.

“I got to take my first real, two-week vacation in over 16 years recently, and since then we’ve taken some other amazing trips to places we always wanted to visit, including trips to wine country in California, as I’m a real wine lover.”

Even with all that, Mike and Karen still take time to be involved with local charities, including the Juvenile Diabetes, Metro Police, and VGK Foundations, along with Three Square, and the Boys & Girls Clubs.

Altogether, it makes for a much more balanced and happy life, and one that allows Crovetti to give even more to his patients than he has for the past two decades. Given the sterling reputation he’s gained during that time, it surely seems that he’s got the right formula down to ensure patient satisfaction.
