Summer Reading Recommendations

Jul 3, 2012   //   by wagona   //   In Review  //  No Comments

By Macy Walsh

The long, hot days of summer are here, and for those of you who insist on frying yourselves to that perfect shade of golden brown at the beach or by the pool, don’t forget to pack a good book or two in that beach bag. If you need help, here are some recommendations that I’ve enjoyed:

At the top of my list is a trilogy: The Hunger Games, Catching Fire and Mockingjay by Suzanne Collins. The story takes place in Panem, a nation built on the ruins of North America, where the wealthy and cruel capital city keeps the 12 outlying districts in line by forcing them to send one boy and one girl between the ages of 12 and 18 to participate in the annual Hunger Games, a fight to the death on live TV. Sixteen-year-old Katniss Everdeen believes that her fate is sealed when she’s forced to represent her own District 12 in the Games. But Katniss knows how to hunt and survive – and soon learns how to fight back against the tyrannical government.

In the ‘Believe It or Not’ category, we have the New York Times bestseller Escape From Camp 14 by Blaine Harden, the shocking story of Shin Dong-hyuk, the only person born in a North Korean prison labor camp to have escaped and survived. Shin knew nothing of civilized existence; he viewed his mother as a competitor for food and witnessed the execution of his brother and sister when their escape plan was discovered. Don’t read this one if you have a weak stomach. Through the lens of Shin’s life, Harden unlocks the secrets of the world’s most repressive totalitarian state.

For those who prefer a more action packed read, check out The Command: Deep Inside the President’s Secret Army by Marc Ambinder & D.B. Grady. The U.S. Joint Special Operations Command (JSOC) has proven to be the most lethal weapon in the President’s arsenal. Shrouded in secrecy, the Command has done more to fight the terrorist threat than any other single entity. Because of such high profile missions as Operation Neptune’s Spear, which resulted in the death of Osama bin Laden, JSOC has attracted much attention, but most only know a fraction of the real story.

For the sports enthusiast, my top pick is The Big Miss: My Years Coaching Tiger Woods by Hank Haney. Hank’s tenure with the gifted golfer began in 2004, and this is a candid and surprisingly insightful account of a celebrated journey during which Tiger collected six major championships and rewrote golf history. Hank was one of the few people allowed behind the curtain, spending countless days with Tiger, often staying at his home and accompanying him at golf tournaments. The result is an intimate portrait of one of the sport’s enduring legends.

If you’re a political junkie like me, don’t miss The Presidents Club: Inside the World’s Most Exclusive Fraternity by Nancy Gibs and Michael Duffy, a candid history of the private relationships, secret alliances and enduring rivalries of modern American presidents. Established by Harry Truman and Herbert Hoover at Dwight Eisenhower’s inauguration, the club is a complicated place where its members share the Oval Office experience but remain rivals for history’s favor. You’ll read about how JFK tried to blame Ike for the Bay of Pigs, how Eisenhower helped Reagan win his first race in 1966, the letter from Nixon that Bill Clinton rereads every year and the rivalry between Clinton and Obama. Fascinating stuff!

Whether your tastes run to fiction or non-fiction, history or sports or something in between, having your favorite book by your side helps provide a great escape from the sweltering heat. Pick one that suits your fancy and dive into a captivating story before you take a dive into the swimming pool this summer.

Comfort with a Twist…Republic Kitchen & Bar

Jul 3, 2012   //   by wagona   //   Haute Spot  //  No Comments

By Mike Sweeney

We call it “comfort food” for a reason. One taste of mouth watering fried chicken or macaroni and cheese and we’re instantly transported back to those wonderful days when carbs didn’t matter and mom made the best meals in town. Republic Kitchen & Bar, located at 9470 S. Eastern Ave. in Henderson, has captured that old fashioned comfort food feel while giving a gourmet spin to those classic dishes you remember.

The modern atmosphere calls to mind a neighborhood pub retrofitted for the 21st century.  High ceilings tower above hardwood floors. A white brick accent wall dominates the bar area, adding an old fashioned feel to the contemporary trappings, while an intimate loft features plush couches and a wide selection of board games to enjoy. As you take your seat, peruse the cocktail menu for a broad range of tasty libations. The Rock Candy Lemonade ($9) was a tad too sweet for me but still enjoyable, blending Ketel One Citroen with lemon sour and rock candy syrup for a confectionary delight. The Republic Sangria ($7) also made a distinctive impression; smooth, chill and popping with berry flavors. Perfect for summer!

Upscale comfort food dominates the menu, all served up by an engaging and attentive staff. We started with the Tuna Nachos ($12.95), a twist on the traditional pub appie using seared ahi atop crispy wonton noodles for a tender yet crunchy texture, the ahi crust adding a nice kick of spice. Fried Chicken ($13.99) was a particular standout among the entrées, if a bit heavy on the stomach. Crispy and well seasoned, served on a bed of creamy mashed potatoes with four buttermilk biscuits, it’s well worth the extra calories. Classic fare gets a new spin with the Republic TV Dinner, available with either turkey ($14.99) or meatloaf ($15.99). Each comes with veggies, mashed potatoes and cobbler. The turkey dinner includes stuffing, gravy and cranberry sauce for a full Thanksgiving presentation, all plated on a fancy porcelain version of  a typical TV dinner tray. Smaller portions ensure you won’t feel overly stuffed, but don’t let the name fool you; the herby flavors of the juicy turkey and tasty trimmings create a variety of homespun tastes that you won’t find in the freezer section. Just like mom used to make, indeed. Remember to save room for desserts such as the sinfully good PB&J ($6), deep fried mini peanut butter sandwiches served with strawberry and chocolate dipping sauces. You may need two orders, because ours disappeared fast!

For a special treat, check out their all you can eat weekend brunch, accompanied by live jazz music on Sunday. You can choose from three tiers to fit any budget. Continental ($8.99) offers a variety of fruit, pastries and yogurt that includes sweet but somewhat flaky Mini Cinnamon Rolls. Continental and Hot Dishes ($13.99) form the second tier, adding favorites such as Cheese Blintzes and Belgian Waffles, along with fresh twists such as luscious Red Velvet Pancakes served with tangy vanilla agave syrup. Continental and Hot Dishes are joined by Specialties ($18.99) for the third tier, adding Eggs Benedict with plentiful Canadian bacon (available with lobster meat and filet for an extra fee), Chicken and Waffles and a delicious Pastrami Hash that adds a smoky, peppered flavor to a breakfast standby. Add all you can drink Mimosas ($15) or Bloody Marys ($12) and you’ve got the perfect lazy weekend meal.

Republic Kitchen & Bar takes comfort food to new levels, adding gourmet twists to old favorites for a fun and unique dining experience. Remember the good old days and discover something new to savor at the same time. For reservations or more info, call 463-3500 or visit www.republickitchenandbar.com.

Beyond the Sun Screen…

Jul 3, 2012   //   by wagona   //   Feeling Fit  //  No Comments

By Aly Wagonseller

Summer is certainly underway with family pool parties, visits to summer camp and theme parks and outdoor vacationing in full swing. Unfortunately, the consequences of all this fun in the sun can also be dangerous to your health. The American Cancer Society estimates that more than 70,000 new cases of melanoma were diagnosed in 2011, and the incidence is on the rise. A disease that doesn’t discriminate by age, melanoma is one of the most common cancers among young adults, and the chances of developing it only increase as we get older.

While most of us know that the continual slathering of a broad spectrum sun screen and protective clothing are a must for defending against dangerous UV rays, you may be surprised to learn that a change in your diet can also help reduce the risk of melanoma. Dr. Walter Quan, a melanoma specialist from the Cancer Treatment Centers of America, believes that by adding organic fruits and vegetables, fish, nuts, seeds and legumes to your meals and switching to nonfat dairy and lean meats, you can reduce your risk of disease. He also names specific foods that aid in the production of healthy skin cells, thereby lessening the likelihood of a melanoma diagnosis.  Dr. Quan’s skin saving super foods include:

Citrus Fruits

With their high content of vitamin C, lemons, limes, oranges and grapefruit contain antioxidants that protect cells from changes that lead to skin cancer. Lemonade never tasted so good!

Avocados

This amazing fruit contains glutathione, a compound that discourages the development of skin cancer. By adding three or four avocados per week to salads, sandwiches or egg white omelettes or by piling baked pita chips with a healthy helping of guacamole, you’ll reduce skin damage in a very flavorsome way.

Pumpkin Seeds

Vitamin E is essential for healthy skin and pumpkin seeds pack a big punch of this valuable nutrient. Toasted and thrown onto salads, they provide satisfying crunch while keeping cancer cells at bay.

Carrots, Sweet Potatoes and Cantaloupe

The color orange is the key to these beta-carotene rich foods that allow the body to produce vitamin A, a nutrient linked to reducing the risk of sunburn and skin cancer. Versatile and tasty, they’re great mashed, raw or made into fruit sorbet, the perfect addition to any summer al fresco meal.

Summer time is fun time, yet it’s important we pay attention to our long term health. By getting into the routine of using sun screen, covering up and adding delicious foods that promote healthy skin, you’ll be splashing about for seasons to come. For more information about melanoma and the Cancer Treatment Centers of America, visit www.cancercenter.com.

Vegetables & Vino – Farmer’s Market Wine Pairings

Farmer’s Market Wine Pairings

By

Gordon Gilbert

In the last few years, Las Vegas has witnessed the birth of some wonderful farmer’s markets, including the marvelous Downtown 3rd (www.downtown3rd.com) and the acclaimed Bet on The Farm(www.betonthefarm.com), where you can find some of the best sustainable local vegetables and artisanal foods in town. Once a rare sight in our desert community, farmer’s markets now dot the Las Vegas valley, providing endless culinary options and a staggering array of fresh produce.

With this kind of variety, the bigger concern becomes which wine to pair with such fantastic delights. One solution might be to mimic the denizens of Europe, where farmer’s markets are a part of daily life, particularly along the Mediterranean. We’ll take a closer look at three of these markets and the amazing white wines their European customers use to complement the contents of their shopping baskets. Best of all, you can find all of these wines right here in Las Vegas.

Viva Italia!

Our first stop will be Genoa, located in the northwest of Italy on the Ligurian coastline. A short distance from the central Piazza de Ferrari, you’ll find the Mercato Orientale. While this market is renowned for some of the most phenomenal seafood on the Italian coast, you’ll also find handmade pasta, meats and a huge array of fruits and vegetables. Two white wines that pair extremely well with this wide assortment of fresh vegetables are Arneis and Gavi.

A native of Piedmont, just north of Liguria, Arneis is delicate but refined and medium bodied with notes of lemon, fresh flowers and minerals, a beautiful accompaniment to green vegetables. Mauro Sebaste Roero Arneis 2010 ($17) brings touches of citrus, white flowers and wet stone in a fabulous wine. Gavi, also from Piedmont, is more full bodied with tropical fruit florals and a touch of honey, not unlike a soft Viognier. We see this in Mauro Sebaste Gavi 2011 ($16) with notes of melon, pineapple and flowers. Thick vegetables such as eggplant, zucchini and squash are a good choice with Gavi, while its tropical notes favor berries and melons as well.

French Toast

Second stop: the Cours Saleya in Nice, France. Known for its famous flower market, you’ll also find a broad variety of fruits, vegetables and herbs. Striped awnings and wonderful scents from both the flora and fresh produce permeate the senses. White wines from nearby Provence and southern Rhône pair well with these choices and can be produced from a variety of grapes. Familiar varietals such as Viognier exist, but more unusual names such as Grenache Blanc and Rolle also play a part. White Côtes du Rhône derived from Viognier pairs well with tomatoes and eggplants while its aromatics pick up on fantastic Provençal herbs. Sample the Fleury Cotes du Rhone Blanc 2010 ($14) for a rich, fragrant wine with hints of orange, peach and apricot.

Vino de España

Mercat de La Boqueria, located on the La Rambla in Barcelona, is perhaps the best known farmer’s market on the planet. Covering an entire city block, this market offers a staggering ensemble of fresh produce, cured meats and seafood. Just outside Barcelona, you’ll find one of Spain’s most renowned areas for producing the sparkling wine known as Cava. A combination of local grapes Xarello, Macabeo and Parellada, Cava is a dry sparkling wine that pairs best with fresh berries from all across the board. For a classic Cava, you can’t go wrong with Segura Viudas Brut Heredad Reserva MV ($17), a dry and floral wine with a long brioche finish.

Just outside of Barcelona lies another region of note called Penedes. White grapes used here include Parellada, Riesling, Muscat, and Gewürztraminer, along with a combination of varietals.  White wines of this region can be medium to full bodied with a wonderful dose of minerality. These characteristics make the wine a perfect combination with veggies such as zucchini, white asparagus and squash blossoms, but it can also be enjoyed with crisp apples and an assortment of cheeses. Gramona Penedes Gessami 2010 ($15) offers a combination of two Muscat varietals and Gewürztraminer in an aromatic, medium bodied wine that pairs well with most produce.

Fortunately, you won’t have to travel across the Atlantic to visit fabulous farmer’s markets. We can access beautiful berries, fantastic greens and aromatic herbs, along with the wines that pair with them, right here in our own neighborhoods. There’s no need to span the globe when you can enjoy all the great tastes of farmer’s market food and wine from the comfort of your own home.

CHARITY

Winder Farms Goes Pink for the Cure

The fight to raise money and awareness for breast cancer is a constant battle, but it’s a battle that has found another ally. Winder Farms, Las Vegas’ “Farmer’s Market on Wheels,” will make a donation to Susan B. Komen for the Cure for every container of their Strawberry Milk sold between now and October 31st to help with breast cancer screening, treatment programs and research. To remind customers of the charitable initiative, labels on the 16oz. and half gallon bottles will now feature the Susan G. Komen for the Cure pink ribbon.

“This is one more way for Winder Farms to help the community and it is our hope that this fundraiser makes it easy for our customers to give back,” said Tyler Wallis, marketing director for Winder Farms. “It also seems like a natural fit since our Strawberry Milk is a wonderful shade of pink, the symbolic color for the organization and the fight against breast cancer.” To place an order or for more information, visit www.winderfarms.com.
VOLUNTEERING

American Cancer Society Seeks Drivers

Cancer affects the lives of thousands of people across Las Vegas, many of whom don’t have readily available transportation to and from their own treatment. The American Cancer Society Road to Recovery program is changing that by providing round trip rides to cancer treatment for patients who don’t have the means to get around. While the program is already in place, only twenty-five drivers have enrolled so far, and with over 100 needed to meet current demands, the call for help is going out wide.

“We’re in desperate need of volunteers,” says Debra Armstrong, Quality of Life Manager in Las Vegas. “It’s the perfect opportunity for students, members of retirement communities or anyone with just a few hours a week to to step forward.” Any driver with a valid license, proof of insurance and a safe, reliable vehicle can participate and help those suffering from this terrible disease get the care they so desperately need. Contact Debra Armstrong at 891-9023 for more information.

A good photographer has the ability to look at any scene in an everyday setting and focus on the smallest detail, a detail that turns out to be a spectacular subject that might otherwise have gone unnoticed and uncelebrated. As it turns out, 89052 resident Terri Clark has that gift. While not a photographer by trade like her husband Keith, Terri focuses on her mission of seeing to the unmet needs of the children and youth of our community by directing her attentions into every resource that can change the lives of thousands of children each day.

Clark began her career in healthcare management with the Blue Cross and Blue Shield Foundation, where she had the opportunity to help start a dental outreach program for children who didn’t have access to dental care. As the throngs of children came through the mobile dental bus, she began to see the suffering that was going on right here in Las Vegas. But dentistry wasn’t the only problem that needed fixing. Clark often encountered school principals and nurses who had asked if she knew of any other outreach efforts that addressed basic needs such as vision care, clothing, food, counseling, medical care and immunizations.  She was overwhelmed by the amount of need versus so few resources.

Clark learned of and began work with an organization called Communities In Schools of Nevada (CISN) in 2006 to research, develop and establish the state’s northeastern affiliate. Her hard work paid off when Communities In Schools of Northeastern Nevada launched in 2007, with Terri as the Executive Director. In 2011, Terri relocated from Elko, Nevada back to Vegas and became CEO for the Communities In Schools state office. She shares her journey, accomplishments and what inspires her to make a difference in the youth of our community.

Why are you passionate about Communities In Schools?

“I believe that this program is the solution to the crisis in education our state faces. This is exactly what the schools had been asking for and the solutions are provided on campus to give students the support they need to graduate. I see the impact that our staff makes in the community and I know someone is better off because we are there.”

How does CISN help?

“We are actively engaged with policy makers, school staff, parents and business partners to ensure that CISN services are extended to as many K-12 students as possible and that those students have access to college.”

You had some incredible results that first year in rural Nevada.

“We helped 2,998 children get immunizations and people of all ages get whooping cough vaccines. We also formed a hunger prevention committee to feed breakfast to kids who qualified for free and reduced breakfast programs. We even went beyond breakfast to solve the issue of hunger on the weekends by connecting students to backpacks of food. Last year, the program served over 34,000 breakfasts and handed out 4,100 backpacks of food.”

You were recently named one of the top ten “Women Who Mean Business” by the Las Vegas Business Press. What do you think makes you successful?

“I’d have to attribute it to my incredibly supportive family, which includes my husband of 30 years and our children Christopher, Rebecca, Rachel, David and Stacie; my faith in God; my father, who taught me the power of hard work; and an engaged board of directors at CISN who take the work to heart, along with a team that really believes in the work we do.”

How do you unplug after a busy day?

“I find math problems particularly distracting. But I might have to cut my enthusiasm for the subject as my son said, ‘Sorry Mom, no math homework tonight, but maybe I can get some tomorrow.’ ”

Tell us something about you that you think others in the community might not know?

“I love pulling off a great practical joke, but be warned, if you play a practical joke on me, I will retaliate and it will be big.”

“Age is strictly a case of mind over matter. If you don’t mind, it doesn’t matter.”  – Jack Benny

There’s a funny thing about aging; as you grow older, it’s easier to remember what you did twenty years ago than it is to remember what you wore the day before. Aging seems to be a growing trend in the community and Southern Nevada. The U.S. Census Bureau reported in their 2010 study that the number of seniors has grown in the past decade due to aging baby boomers, with 14.4% of people in Clark County over the age of 62, and the post-World War II generation has now reached age 65. The need for specialized elderly care continues to rise as our residents age, and 89074 resident Michael DiAsio has taken a personal approach to assisting maturing residents and their families through the Visiting Angels care giving business, which is a family business for DiAsio.

Although there are a total of 225 caregivers among the two locations, DiAsio’s wife Jackie and three of their children and their son-in-law work in the offices. Each day, they help an average of 450 seniors who need assistance with the activities of daily living such as personal hygiene, meal preparation and light housekeeping. They partner with other health care professionals such as the Lou Ruvo Center for Brain Health and provide in-home care for many individuals who suffer from memory loss issues such as Alzheimer’s disease.

DiAsio has not only committed himself to serving the needs of the aging through his business, but he also assists on caregiving committees in an advisory capacity and has most recently become involved with the Clark County Alzheimer’s Action Network, who intends to make Alzheimer’s disease a community priority and provide high quality care and services for those who need it most. Michael DiAsio gave us some insight into how Alzheimer’s disease is affecting our community and why he’s passionate about improving the quality of life for Southern Nevada seniors.

Visiting Angels, which is the largest senior care giving franchise in Southern Nevada, is very involved in the care and treatment of Alzheimer’s patients.

“Yes. Believe it or not, in the last ten years, our caregivers have served more than 1.5 million hours of in-home care across the Las Vegas Valley. This includes care for those with Alzheimer’s disease. It is as devastating for those it affects as for their families and friends.”

Can you tell us more about the disease and how it occurs?

“Alzheimer’s disease is the most common cause of dementia and accounts for 60-70 percent of all cases. Alzheimer’s and other dementias are progressive, degenerative illnesses that attack the brain. They affect people’s abilities, impacting on all aspects of their life and upon others in their lives, particularly those who care for them.”

According to statistics, the numbers of those affected are rising.

“Yes. In Nevada, it is expected that by 2025, there will be twice the number of people with Alzheimer’s disease that there were in 2000. In the U.S., someone develops Alzheimer’s disease every 69 seconds.”

The services of your company and the work you are doing with the Clark County Alzheimer’s Action Network seems to be more important than ever.

“Yes, it is very important, as I think that Alzheimer’s will be the ‘disease of our generation.’  Every month, CCAAN (with some 40 medical and charitable leaders) makes progress on developing strategies for educating the healthcare community and the public. We as a society need to work together to ‘get our arms around it’ to improve everyone’s quality of life. The first meeting was last November. In addition to making Alzheimer’s disease a priority for the community, we are collaborating to promote a cure and educate the public on how to modify their lifestyle to reduce their risk of obtaining Alzheimer’s.”

Why is it important for you to give back to those in need?

“I’ve always had a strong desire to improve whatever I’m involved with and help others solve problems. Having a loved one with Alzheimer’s and caring for a loved one with Alzheimer’s is extremely difficult and stressful to the family. Additionally, this disease is becoming more prevalent at a rapid pace. It is important to improve the lives of every individual we touch, which in turn improves the entire community. We are all in this together.”

What would you say you are most passionate about in your life?

“My family and friends. Italians outgrow clothes, not people.”

There does seem to be a common thread with family throughout your life and your business.  How do you personally unplug after what must be a very busy day?

“A glass of Chianti and an old movie like Diner.”
